An egg curry should always be part of one’s comfort food list as its quite simple and easy to make.
- Boiled Eggs
- Potatoes peeled and cut into pieces
- 2 Onions Sliced
- 1 tomato sliced
- 1 tablespoon ginger – garlic paste
- 1/4 tablespoon cumin seeds
- 1/2 tablespoon Cumin Powder
- 1 tablespoon Turmeric Powder
- Salt to taste
- 2 Green chillies
- 1/2 tablespoon Garam Masala Powder
- 3 tablespoon Mustard oil
Add 1/2 tbs of turmeric powder in 2 tbs of mustard oil and fry the boiled eggs until it turns yellow in colour. Remove it from the oil and keep it aside. In the same oil add the potatoes and let it cook for 5 mins. Remove it from the oil and keep it aside.
In the same pan add 1 tbs of mustard oil and add the cumin seeds. When it splutters add the sliced onions and green chillies and let it cook for 5 mins. Add the ginger garlic paste too.
After 5 mins, add the turmeric powder, cumin powder and salt in it (I have made a paste of turmeric powder, cumin powder, salt and water).
After the spices mix up nicely, add the sliced tomatoes to it and cook it till it becomes soft and mushy. Add 1 tbs of water to it.
Now add the potatoes and eggs to this and mix it well. Add 1 cup of water, cover it with a lid and let it cook for another 5 mins.
Now open the lid and add the garam masala powder.
Your egg curry is ready to be served.
